LaGRANGE – You scream, I scream, we all scream for… gourmet popsicles.

Frios Gourmet Pops recently announced plans to open up a location in downtown LaGrange by early July — just in time for the hottest part of the summer. While construction is underway at their new home at 120 Bull Street, the owners are sharing the treats they fell in love with the community using a food cart.

“We went on vacation a few years ago and stumbled across one (Frios location), and we tried it, and we just fell in love with it,” Owner Matthew Oleson said. “We were just sitting around the table thinking if we could just have something like this in LaGrange, and long story short here we are three years later opening one.”

The gourmet pops come in a wide range of flavors with the selection expected to rotate throughout the year depending on customer preferences, but currently available flavors like sweet tea and blueberry cheesecake are already attracting local attention.

“Key lime pie is one of my favorites,” owner Lynsay Oleson said. “Cookies and milk is up there too. As far as fruity, I’d say strawberry balsamic is one of my favorites.”

Matthew and his wife Lynsay are both locals, and the popsicles that they sell are made just over two hours away with ingredients from the region.

“They are made in Gadsden, Alabama at the headquarters, and they source all their products from farms — all the fruit and the produce — from farms in Alabama and the dairy as well,” Matthew Oleson said. “So, it is all locally grown.”

The couple has a vision for their store to become part of the community experience, much like some of the other longstanding community favorites on Bull Street.

“It is something that families can do — come by and enjoy a popsicle,” Matthew Oleson said. “It is nostalgic, and it is just a really good variety of flavors that you can pretty much appease everyone’s taste buds.”

This venture is about more than gourmet popsicles for them though.

“This experience has truly been a God thing for us because (Matthew) was going through a career change and has always dreamed of owning his own restaurant,” Lynsay Oleson said. “After much prayer and anticipation and scripture reading and everything, we just felt that this is what we are supposed to do. This is something that we can do together. We feel really blessed.”

Frios hopes to have its Bull Street location open by early July, but until then they have posted a schedule noting times and locations for their pop cart on Facebook. Frios pops will be available for purchase at the LaFayette Society for Performing Arts’ “Lion King” production on Friday and Saturday, as well as during Sunsets at Sweetland throughout the summer. This week the cart will be on Bull Street on Tuesday from 11 a.m. to 2:30 p.m., Wednesday 6 to 8 p.m., Thursday 12:30 to 3:30 p.m. and 6 to 8 p.m., Friday 11 to 2:30 p.m. and Saturday 11 to 2:30 p.m.
