Three’s a Charm: Couple opens Trios Mexican cuisine in downtown LaGrange, their third business to date

 For Alex and Jessica Brown, the number three has always been a magical number. Now, with the opening of Trios Cantina downtown, they are hoping the magic continues.

“Originally, when we came up with the concept, we knew that we were going to have a trio in the menu —  the salsa, the guacamole, and the queso — initially not really leading to that name,” Jessica said. “But then the number three kept popping up, the address is 133 Bull St., we have three kids. This is going to be our third business at this time, so I said, ‘what about Trios?’ and it stuck.”

She said she liked the ring of it. 

“It’s not a burger. It’s somewhere new, somewhere different,” said Delilah Brooks, a customer who has already tried the new restaurant. 

Historically, 133 Bull Street was previously the home of a neighborhood liquor store and after that a vape shop.

“The opportunity just fell onto our laps, we met the owner of the building and started to discuss businesses,” Jessica said. “I went home to talk to my husband that night, and that’s how it blossomed.”

Previously, the couple owned Sweet Roast, which was acquired in late 2021 by Café Brûlée and Local Groundz owner Phillip Abbott.

“I know when Sweet Roast was here they had amazing coffee and vibes. It’s great that they came back with those same vibes,” Elizabeth Dunson, a customer said.

The couple has many goals for their newest venture, one of which is to provide something new that allows the downtown area to have a hangout spot. 

“I don’t think there is a place really like this downtown where you can go and have a margarita or a beer with your friends outside or get something quick and easy,” Jessica said. “I think it will bring the community together and allow them to have a really cool spot to hang out with good food, good vibes and even better drinks.”

Along with creating a space for friends and family, the couple sets out to make their restaurant one that serves food quickly. 

“We aim for our customers to have their food in 5 or 10 minutes, that’s the whole purpose and what we shoot for. It’s supposed to be quick and easy, it’s also supposed to give you that vibe where you can sit and chill with your friends and enjoy live music and karaoke,” Jessica said.

At this point, Trios won’t sell coffee but the restaurant is considering opening for brunch on Sundays starting in September.

“It will be something that will still have that Mexican theme, but we might add in brunch items like mimosas,” Jessica said.
